Gilbert’s Hot Chicken, Fish & Shrimp, offers all that the name says it will, in addition to an array of sides, many of which make appearances on the menus at Underground Kitchen and Social. The bar program is heavy on moonshine, whiskey and bourbon, offering a selection of hand-crafted cocktails, as well as 20 rotating draft lines and an assortment of bottles, featuring local and national craft beers. Gilbert's Hot Chicken, Fish & Shrimp offers guests a fresh and comforting Southern meal with beachfront views. In addition to dine-in, the restaurant also offers takeaway.

Also located in the same space, Seachasers Lounge, hosts live entertainment two days a week, and offers the same cocktail menu.

Gilbert returned to the Jacksonville area in 2015 with Gilbert’s Underground Kitchen in Fernandina Beach, serving seasonal deep southern cuisine; and with Gilbert’s Social, in Jacksonville proper, serving internationally-influenced Southern fare. With over 20 years of professional culinary experience, Kenny rose to fame in 2010 as the fan favorite on season seven of Bravo’s "Top Chef." Since then, he has cooked for the likes of Oprah Winfrey, Gayle King, Stedman Graham, Ava Duvernay and Jeff Bezos, just to name a few. Kenny began his culinary career on Amelia Island (30 miles North of Jacksonville) with The Ritz-Carlton Hotel Company.
